Sorting the pepper to the high standards required to qualify as Kampot Pepper, under the PGI (Protected Geographic Indication) rules, is a laborious process. Here the ladies at The Kampot Pepper Shop remove all the corns that are not up to standard – typically that may be up to 30% for black pepper.
Kampot Pepper Sorting in Progress
You can come and witness the sorting process yourself by visiting The Kampot Pepper Shop between 8am and 5pm (excluding Sundays), located just behind the Old Market in Kampot’s historic town centre.
